Spicy Baked Rigatoni

This dish is the perfect dish to make for a group of friends or deliver to a good friend to make their life a little easier.  Scale of 1 to 10 on difficulty.. this is a 1!

Here is how it goes down.


  • 2 Spicy Italian Chicken Sausages
  • 3/4 of a  yellow onion – finely diced
  • 1/2 of a red pepper – finely diced
  • 1/2 of a carrot – finely diced
  • 2 cloves of garlic – finely diced
  • 1 tablespoon of Paprika
  • 1 1/2 tablespoons of Italian Seasoning
  • 28 oz can of crushed tomatoes
  • 1 8 oz cup of tomato sauce
  • 1/2 cup of water
  • 1 teaspoon of honey
  • 1 teaspoon of kosher salt
  • 1 cup of Mozzarella cheese (I used a blend of 4 cheeses)
  • 1 1/2 tablespoons of veggie oil
  • 16 oz box  of rigatoni or ziti – follow cooking directions on the box

Directions: Sauce

In a pot heat up the veggie oil.  Remove sausage from it’s casing and sauté until no longer pink.  Add the onions for around 2 mins, then add red pepper and carrots for another minute or so.  Throw in the garlic for 3o seconds right before you introduce the seasoning (paprika & Italian seasoning).  Give it a good mix and the add the crushed tomatoes and tomato sauce. Let it simmer for 40-45 mins and then add your honey and salt.

Directions: Mixology!

Add the pasta to your sauce and 1/2 the cup of cheese.  Mix it up and scoop into your baking dish, which you can spray w/ Pam.   Throw the rest of the cheese on top and pop into a preheated oven at 350 for 20-25 mins. When done let it sit for 10 minutes before passing it around!

All and All… this was really easy to make and serves 4 people who are up for the spice.
