In an effort to make nachos a tad bit healthier I deconstructed the famous app! You want the truth? You gotta make this!
Ingredients:
Directions:
Coin the potatoes 1/4 of inch thick. Season with light drizzle of extra olive oil, salt, pepper and garlic powder. Pre-heat the oven to 375 and roast the potatoes for 25 minutes (depending on oven).
Turkey Chili
Heat up 2 tablespoons of extra virgin olive oil. Add the red onion and sauté for 2 mins until tender. Add garlic and stir for 30 seconds. Next up put the ground turkey and meat from inside the turkey sausage in to the pan and saute until browned. Add seasoning, stir and then add chopped tomatoes and black beans. Mix it all up add some salt and pepper. Bring stove to a simmer, cover and wait 20 minutes.
Plate the potatoes, top with the turkey chili, cover w/ cheese, throw on some hot peppers then cover w/ handful of Cilantro.
I loved making it and I loved eating eat!!
