Lobster Rolls

Lobster Roll recipe my Uncle Bill and I put together. New England Style!

Ingredients: makes 5 sandwiches.

  • 1 -1/2 pounds of lobster meat
  • 1/3 cup of LOW FAT mayo
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons of fresh chives
  • 1 tablespoon fresh Tarragon
  • 1/2 cup of diced celery
  • Salt, black pepper and garlic powder to taste
  • Potato sticks
  • New England style hotdog buns
  • Extra Virgin Olive Oil
  • 1 bunch of Red leaf lettuce and 1 large tomato

1. Steam your lobster:  or just buy the meat.

Steaming times:

  • 1-1/4 pounds…..12 minutes
  • 1-1/2 pounds….15 minutes
  • 2 pounds……….18 minutes
  • 2-1/2 pounds….20 minutes

2. Lobster Salad: Put the mayo, lemon juice and herbs in a bowl and mix.   Introduce the lobster and celery and mix again.  Add the seasoning to taste and mix again. Done!

3. Hot Dog Bun: lightly brush the outsides with extra virgin olive oil and then grill or toast to warm.

4. Spoon the lobster salad into the bun resting on a bed of lettuce and tomatoes and then top with the potato sticks.

5. Enjoy
