Lemon Vinaigrette Salad Dressing recipe from my Uncle Bill. Uncle Bill is an award winning chef so I’ll be tapping into his expertise from time to time…more often than not though!

Ingredients:

• 2 lemons
• 1 garlic clove
• 1 shallot
• 1 teaspoon of dijon mustard
• 2 pinches of salt & pepper
• 3/4 cup of extra virgin olive oil

Put the lemon juice, garlic clove, shallot and dijon mustard into the food processor and spin! Add salt and pepper and then spin the blade again. While the wheel is spinning introduce your extra virgin olive oil.

It actually takes longer to wash the dishes than to make this outstanding dressing.
