Chicken Quesadillas

 Mid-Week dinner. Quick, Healthy and inexpensive! Oh yeah….and really good! Keep in mind that this is my variation. You can choose your adventure and use shrimp, steak, veggies or whatever!

 Ingredients:

  • Extra Virgin Olive Oil
  • Multi-grain or wheat tortillas
  • Fat Free re-fried beans
  • Grilled Chicken
  • Can of corn/peppers
  • Low fat shredded cheese

 Directions:

 Chicken: Pick up a package of thinly sliced chicken. Marinate it… here’s what I used.

  • Juice from a lime (then drained)
  • ¼ teaspoon of Dijon mustard
  • Salt, Pepper, Garlic Powder
  • Cap full of my Extra Virgin Olive Oil

 Set stove to med-high heat and let the pan heat up. Put the chicken on 2 minutes a side. Check to be sure, but 2-3 minutes a side will work well!

 Quesadilla:

 Lightly brush the one side of the tortilla w/ Extra Virgin Olive Oil. Then on the opposite side layer on your ingredients. You don’t want to over stuff the tortilla so have some restraint. I know you’re hungry. Have 2 if you need to!

 Add your re-fried beans, your chicken, the corn and pepper mix and then your cheese. Fold the tortilla to cover your toppings. Put on a medium to high grill pan few minutes a side to desired temp and crispiness!

 Let it cool for a minute before cutting into it. Have salsa or quac on the side for added flavor.

Lime, Cilantro Coleslaw: (serves 4)

  • Bag of coleslaw
  • 1 lime
  • Bunch of Cilantro
  • 1 glove of garlic
  • Extra Virgin Olive Oil
  • Salt and Pepper to taste

 Directions.  

 If you have a mortar and pestle throw a half teaspoon of kosher salt into the mortar along w/ your pealed clove of garlic. Mash until you have made a garlic paste. If you don’t have a mortar & pestle then use garlic powder.

 Add 3 table spoons of Extra Virgin Olive Oil and let it sit while you prepare the salad.

 In a bowl, empty the coleslaw bag and add a handful of cilantro. Give it a mix. Squeeze the lime in and then add the garlic and olive oil. Mix it up then taste for seasoning.

 If you want more oil or lime go for it!

That’s the deal. Really easy and perfect for dinner after work. Even make a couple extra quesadillas and freeze them for another night or kick off a party with Q-dillas starters!
