Breakfast Burrito

 
Thanks to the hospitable people at Sophia’s Cafe in Boston, MA I now have a GREAT go to breakfast/brunch dish. 

Here’s how it goes down…

Ingredients, a.k.a. What you need to make this.

  • 3 Eggs (1 egg, 2 egg whites)
  • 1 Chipotle Soy Sausage
  • Queso Fresco Cheese
  • Baby Spinach
  • 1 Tomato diced
  • 1 Avocado
  • Hot Sauce
  • Whole Wheat Tortilla

Directions:

Beat the eggs (add a pinch of Kosher salt and tablespoon).  Make your omelet (or see video for how-to).

Place the omelet in the center of your tortilla, top w/ cheese, sausage, spinach, tomato, hot sauce and avocado.  Don’t over stuff! Roll into a burrito (see video) and pop into a Penni maker or on to a hot skillet for the ultimate experience.

This is EASY to make and the reward is being able to bite into a wealth of flavor!!
