Baked Chicken is a classic dish and one that reminds of home because it’s my dad’s recipe! You can make it and I know you’re gonna love it!
- 3 1/2 pound chicken
- Kosher salt and Pepper
- Butter is optional, but really good
- Extra Virgin Olive Oil
- 1 Lemon
- 6-10 sprigs of Thyme
Preheat oven to 375 degrees F. Remove giblets from the inside of the chicken, don’t be afraid! Wash the bird off w/ cool water and then pat dry. Stuff the chicken w/ your sliced lemons and sprigs of thyme and give the bird a decent layer of extra virgin olive oil…then add your sesoning. If you love butter you can rub some butter on or just put some pieces under the skin.
Put the chicken on parchment paper if you have it, if not spray the tray w/ Pam. Put the bird in the oven for one hour and fifteen minutes on the middle rack. Half way through just spin the tray around.
After about an hour you can check the chicken leg to see if it’s done. If the leg is loose you’re lookin good! or if you have gadgets use your thermometer: 170 degrees for the breast, 180 degrees for the leg.
Pull the pan out, cover the bird w/ foil and let it sit for 10-15 mins.
